Game is choppy

After several hours, the game gets choppy on my pc, and will freeze every ingame day or so for half a second. When I log out of steam and the game and restart the save, the game plays as normal. This is happening across multiple saves, and the saves work after being loaded into the game. I also looked at my cpu and mem usage, and both went up over time.
I have the following:
11th gen intel i7-11700 @2.5ghz
16gb ram with 32gb swap file (yes its overkill)
Nvidia geforce gtx 1650
